Eggs can't get any more Filipino than this... they're red... and yes, they're salty. Always a welcome attraction in every breakfast... mixed with chopped onions and tomatoes, it delights every Pinoy every morning when enjoying their tuyo or daing na bangus!

ReplyDeleteoh i miss itlog na maalat! iba ang salted egg dito. nakabalot sa mud and maitim. itlog maalat with tomatoes, daing, and sinangag with bawang! yum yum!
ReplyDeleteshalum, my husband and i are a prefect combination when it comes to itlog na maalat... he likes the white part, i get the yolk... yey! everyone is happy! hahaha...

ReplyDeleteI would like to say I prefer the yolk or the white... but I can't! I like 'em both!
ReplyDeleteI tried making them by immersing them in a solution of salt and water for 2-3 weeks and hardboiling them when ready. I adjust the saltiness to my taste by varying the number of days it is immersed. However, I can't figure out how to make the edges of the yolk a little gooey. Pero OK na rin.

Are these the oily type? My tita says that you need to sample salted eggs before buying a batch. Sometimes I can 10 batches before choosing what I really like.
ReplyDeletewyatt, these were packed na in 6. hindi ma sample. but i was confident they were oily, kasi nga from pateros. theyre supposed to make the best red eggs. and true enough, they were oily.
