I love Red Ribbon's Mango roll. And when they came out with the new Mango Cashew roll, I just had to try it out.
There isn't much difference in the icing and the mango-ness of the roll. It is still the same creamy mango icing with just the right amount of sweetness. But this time, cashew bits have been added for more taste and more texture.
The big difference is in the cake they used. My friend, who knows everything about cakes and breads, told me that this kind of cake is what they call angel cake (let me ask her again if I got that right).... the cake uses egg whites instead of whole eggs... thus the difference in texture. The angel cake is denser and heavier.

uhm, mango cake is one of my fave from red ribbon (blueberry cheesecake tops my list). wish they have it here, i miss eating cakes like this! parang gusto ko shang kunin in front of me. yum!

mimi, actually, cake pa din sha.. mas dense nga lang and more compact than the regular sponge cake. hindi sha icing type like brazo. angel's cake ata ang tawag nila dito.. pure egg white daw so more healthy. naks.
